This a super quick and tasty pasta dish perfect for a quick lunch. I'm a bit addicted to the spicy flavor of the the Korean chili paste gochujang which has a slightly sweet tang to it and these days is widely available online even in Spain which would have been unthinkable just a few years ago! If you don't have any in your cupboard just use extra chili flakes 🌶 and if you don't have passata, regular tinned crushed tomatoes are fine but you'll need to turn the heat up for longer to get rid of excess liquid.

Ingredients

25 minutes
2 servings
  • 1 handfulPasta of your choice
  • 1tray of prawns (fresh or frozen)
  • 1 tbspfinely chopped onion
  • 1 tbspfinely chopped red and green peppers (optional)
  • 1/2 tspground garlic
  • 1 tspground lemongrass
  • 1/2 tspground ginger
  • 1little olive oil
  • 1 knobbutter
  • 1 tbspcooking sake (optional)
  • 4 tbsppassata
  • To taste Salt and pepper
  • 1 tspgochujang paste

Steps

  1. 1

    Cook the pasta of your choice while you cook the sauce. Heat the oil and butter in a pan or wok with a pinch of salt and the ground lemongrass, garlic and ginger. When it is sizzling, add the vegetable (I cheated and used frozen chopped onion and red and green peppers - a great way to save time)

    Add the prawns and turn up the heat

    As soon as they start to change colour, add the sake, the gochujang paste and thr passata. Stir well over a high heat for a couple of minutes.

    Taste and adjust seasoning. I added a little more ginger. Add the cooked pasta to the pan.

    And serve! I added. Lack pepper and some parmesan cheese. If you don't want cheese, add a squirt of lemon. Enjoy!
