Sweet potato pie is a southern classic in the south in the USA! My friends mother made it for me at thanksgiving and let me tell you I was incredibly thankful. I loved that pie so much I’ve been making it since then 🎊

Since my sweet potatoes are white I’m adding 2 small carrots just for color. Clean and cut sweet potatoes. Clean and peel top layer on carrots and cut into chunks. Put in a pot, cover with water and boil until soft all the way through. Drain. Set aside. Once cool peel skin off potatoes.

To a clean mixing bowl (I’m using a stand mixer)add potatoes and carrots (if using). I use the paddle first to break up the potatoes. Add sugars, coconut milk and…

Add all the seasonings and change the mixer accessory to the mixing one.

Turn on mixer to a medium speed and mix and pause, scrape the sides and turn back on. Taste and adjust flavors to your liking.

Add the eggs one at a time and mix after each addition. Add vanilla and mix. Third video shows the consistency

Preheat oven to 320f or 160c. Find your desired pie plate or baking dish and add pie crust of choice. Then pour the sweet potato mixture.

Bake for about 1 hour depending on your oven. Insert a knife carefully to the center. If it comes out clean it is finished. If not, put back in for 5 mins and check with knife again. Repeat as necessary. Take out of oven when the knife test is complete. Cool and then refrigerate for at least 2 hours. Serve with cool whip if so desired but enjoy this southern classic to the fullest!
