Had some leftover chicken tikka ( kebab ) and leftover rice, so made quick yummy Fried Rice for breakfast/brunch.

Ingredients

30 minutes prep + cook

1.5 cupsLeftover Rice
4-5 PiecesChicken Tikka
1small Onion sliced
1 tbspMinced Garlic
1-2Fresh Chillies chopped
1-2Spring onion chopped
Salt as per taste
1 pinchBlack pepper powder
1/2 tspChicken stock powder (optional)
1-2 tbspSesame seeds
2Eggs (optional) for Sunnyside

30 minutes prep + cook

Cut the chicken tikka pieces into small bits. Heat sesame oil or any oil of your choice. Add in the garlic and when it starts browning add in the onion slices and chilli and give it a good mix. Add in the chicken tikka and stir it along with the garlic, onion and chilli for a minute.

Add in the leftover rice and black pepper and give it a mix. Add in Chicken stock powder (optional) and give it a mix. Then add the salt as per taste and the spring onion can also be added at this stage. Give it a good mix and stir fry it for few minutes till everything gets evenly mixed up. Your chicken tikka fried rice is ready to serve.

If you like a sunny side up to be served with it, go ahead and heat up a pan with Oil, crack and add in the egg, I add little oil so I cover the egg pan for few minutes till the egg white solidifies, sprinkle salt and pepper if you want. I don’t like over fried eggs so I cook on a low flame. Once done serve with the fried rice or simply skip if you don’t want to have. Enjoy !
