They’re crunchy outside, soft inside, and a healthy alternative to deep-fried cutlets—perfect with mint chutney or ketchup.

Wash and soak dalia in lukr warm water for 10 minutes. Drain excess water and let it cool. In a mixing bowl, combined dalia, mashed potato, steamed veggies,, green chilies, ginger pasted and all the spices.
Add coriander leaves, curry leaves and wheat flour for binding. Mix well into a dough-like consistency. - 2
Shape the cutlets: Grease your palms with a little oil. Shape the mixture into round or oval cutlets. Air-fry: Preheat the air fryer at 180°C for 5 minutes. Brush each cutlet lightly with oil. Place them in the air fryer basket in a single layer. Cook at 180°C for 12–15 minutes, flipping halfway, until golden and crisp.

Garnish with fresh coriander leaves. Serve hot with mint chutney, tamarind chutney, or ketchup. You can also tuck them into burgers or wraps for a wholesome snack.
