Wash the sweet potatoes, boil them, and mash them well. Heat ghee in a pan and sauté the mashed sweet potatoes. Then add milk and mix thoroughly. Once the milk is absorbed, add sugar and stir well until the mixture thickens and comes together like a soft dough (puran). Add cardamom powder, mix properly, and set it aside to cool. After that, divide the mixture into medium-sized balls.

For the dough... Now add ghee to the farali flour and knead it into a soft dough like roti dough using water. Finally, add saffron-infused milk and knead the dough well. Let it rest for some time.

After resting, divide the dough into small portions like roti balls. Flatten each one slightly, place a ball of the sweet filling inside, and gently roll it out. Cook it on a pan over low heat until done. Once removed, apply ghee on top.

And your Sweet Potato Puran Poli is ready! It tastes absolutely delicious and is a joy to eat 😋
Tips
1) Boil the sweet potatoes well and mash them smoothly—no lumps for a soft filling.
2) Let the filling cool completely before stuffing, otherwise it can tear the dough.
