Rinse the beef bones thoroughly and place them in a pot with the crushed lemongrass stalks and 1/4 pineapple. When the meat on the bones starts to cook, add the seasonings to taste. Simmer for another 10 minutes, then adjust the seasoning so the broth is slightly stronger, as it will be diluted when you add the noodles.

Soak the vegetables in salted water and rinse well. Chop the lettuce, and mix all the vegetables together when ready to serve. Chop the green onions and cilantro, and thinly slice the onion for garnishing the noodle bowls.

To serve: Place noodles in a bowl, ladle the beef broth over them, and top with green onions. Add chili oil if you like it spicy.

Add the fresh vegetables to your bowl when eating for extra flavor and freshness.
