Ingredients

  1. 3 cupsold-fashioned oats (about 270 grams)
  2. 1/3 cupwalnuts (about 35 grams)
  3. 1/3 cupalmonds (about 40 grams)
  4. 1/3 cupsunflower seeds (about 40 grams)
  5. 1/3 cuppumpkin seeds (about 40 grams)
  6. 1/3 cupchia seeds (about 40 grams)
  7. 1/3 cupshredded coconut (about 25 grams)
  8. 1/3 cupdried cranberries (about 40 grams)
  9. 1/3 cuphoney (about 110 grams)
  10. 1/3 cupplus 1 tablespoon maple syrup (about 95 grams)
  11. 1/4 cupmelted butter (about 60 grams)
  12. 2 tablespoonsbrown sugar (about 25 grams)
  13. 1 tablespoonvanilla extract
  14. 1/2 teaspoonground cinnamon
  15. 2 teaspoonscocoa powder
  16. 1 teaspoonolive oil

Steps

  1. 1

    Mix all the dry ingredients together (except the coconut and cranberries).

  2. 2

    In a separate bowl, combine all the liquid ingredients and mix well.

    Spread the mixture onto a baking sheet lined with parchment paper in an even layer.

    Bake at 350°F (180°C) for 15–17 minutes, until the edges are lightly golden.

    Remove from the oven, add the coconut and cranberries, mix gently, and press down slightly. Return to the oven for another 13–15 minutes.

    Let cool completely before storing (this helps it stay crunchy).
