Ingredients

30 minutes
Serves 2 servings
  • 1.1 lbsfrozen cleaned baby squid (500 g)
  • 1 bunchfresh asparagus
  • Leftover roasted vegetables (such as bell pepper, zucchini, cauliflower, etc.)
  • Fresh parsley
  • Olive oil
  • Salt

Steps

30 minutes
  1. 1

    Place the baby squid in the refrigerator the night before to thaw slowly.

  2. 2

    Trim off the tough ends of the asparagus.

  3. 3

    Drain the baby squid.

  4. 4

    Pour a generous drizzle of olive oil into a large skillet.

  5. 5

    Sauté the baby squid and asparagus, seasoning with salt.

  6. 6

    When the asparagus starts to become tender, add the chopped roasted vegetables.

  7. 7

    Stir for a few minutes until the vegetables are heated through.

  8. 8

    Divide between two plates and sprinkle with chopped fresh parsley.
