  1. 2free-range chicken breasts (about 1 1/2 lbs or 700 grams)
  2. 3leeks (use only the green parts; see linked recipe for the white parts)
    Feuilletés chèvre poireaux, salade de jeunes pousses
  3. 1 tablespoonsesame oil
  4. 2heaping tablespoons miso paste
  5. 1 tablespoongranulated sugar
  6. 2 tablespoonsmirin
  7. 2 tablespoonssake
  8. 1 teaspoonsoy sauce
  9. 1 tablespoonmixed sesame seeds

    Wash the leeks.

    Cut the leeks into small pieces. Heat the sesame oil in a large skillet.

    Add the leeks and toss to coat.

    Stir-fry over high heat for 5 minutes.

    Add the miso paste and sugar.

    Add the mirin, sake, and soy sauce.

    Stir and cook until the liquid has evaporated, then remove from heat.

    Cut the chicken into cubes.

    Place the chicken in a large bowl and add the leeks.

    Mix well and let marinate in the refrigerator for 4 hours.

    Drizzle a little sesame oil in a skillet and add the contents of the bowl.

    Cook over medium heat for 15 to 20 minutes, stirring frequently.

    Transfer to a serving dish and sprinkle with sesame seeds.
