Uggani - South Indian Puffed Rice Breakfast

Uggani also known as Vaggani or Borugula Upma or Mandakki is a popular South Indian Breakfast and a snack dish primarily associated with the Rayalaseema region of Andhra Pradesh and parts of Karnataka.
It is a savoury preparation made from Puffed Rice. It is briefly soaked in water, then squeezed dry and tossed in a flavourful tempering of Cumin, Peanuts, Onions and Tomatoes. A unique addition to this beautiful looking dish Uggani is the addition of Pappula Podi or Roasted Gram powdered along with dry Red Chillies and Garlic cloves.

This is almost always served with Mirchi Bajji or Long Green Chilli Pakoras or Fritters. This is a signature pairing and the combo is loved by all for it's unique taste and flavour. It is a popular and the most loved streetfood and is made in almost every single household of the region as well. You would definitely love it for many reasons. Uggani is made with Puffed Rice and Poha is made with Flattened Rice and hence both are different from each other and are unique in their own ways. People often gets confused with them. Uggani is purely South Indian. In Karnataka it is often called as Mandakki Oggarane. In Maharashtra and Gujarat similar versions are called as Sushila.

Ingredients

20-25 minutes
3-4 servings
  • 200 gmPuffed Rice
  • 2 tbspOil
  • 1 tspCumin Seeds
  • 1 tspBengal Gram or Chana Daal
  • 1 tspBlack Gram or Urad Daal
  • 1/4 cupPeanuts
  • 8-10Curry Leaves
  • 1medium sized chopped Onion
  • 2finely chopped Tomatoes
  • 1 tspSalt
  • 1 tspCoriander powder
  • 1/2 tspRed Chilli powder
  • 1/2 tspTurmeric powder
  • 1-2finely chopped Green Chillies
  • 1 tbspLemon juice
  • 3-4 tbspchopped Coriander Leaves
  • Pappula Podi or Roasted Gram powder -
  • 2-3 tbspRoasted Gram
  • 2Dry Red Chillies
  • 2-3 clovesGarlic

Steps

20-25 minutes
  1. 1

    Briefly soak puffed rice at first. Later squeeze it well and set aside until use.

  2. 2

    Heat oil in a kadai. Add cumin and curry leaves. Also add chopped green chillies and onion. Saute all on a low heat. Add both bengal gram and black gram too.

    Now add the chopped tomatoes and the powdered spices. Cook until the raw smell fades away.

    Grind roasted gram powder along with dry red chillies and garlic. Add this to the kadai. And finally the briefly soaked puffed rice too.

    Give that all a good mix and cook for a further 4-5 minutes on a low heat. Garnish with freshly sourced and chopped coriander leaves as well. Squeeze some lemon juice as the final step towards the preparation of this amazing dish.

    Serve it piping hot alongside mirchi bajji or as is for a healthy and a yummy Breakfast. Enjoy!
