Place the oat flakes in a blender and pulse briefly until they become a flour-like consistency.

Add the remaining ingredients to the blender and blend until smooth and combined. If the batter is too thick, add a little more milk as needed.

Heat a nonstick skillet over medium heat and add a very small amount of oil. Once hot, use a tablespoon to drop spoonfuls of batter onto the skillet.

Cook for 1-2 minutes, until bubbles form and the bottom is golden. Flip with a spatula and cook for another minute until golden on the other side. Repeat with the remaining batter.

I served them spread out with a little honey and strawberries on top. You can stack them and add any fruit or topping you like.
