Coleslaw and Crispy Rice Salad with Chicken

This is one of the most refreshing and satisfying salads I’ve ever had. Would also be delicious with grilled tofu or canned salmon for non meat eaters! Add more sweet chili sauce for a sweeter dressing (I’m a savory gal so I only put a drop😊).

Cook brown rice according to package instructions.

Mix cooked rice with soy sauce, Sriracha, chili crisp, and sesame oil.

Spread rice on a baking tray and bake at 400°F for 30 minutes.

In a large bowl, combine edamame, chicken, coleslaw mix, green onions, carrots, avocado, and cucumbers.

For the dressing, mix Greek yogurt, mayonnaise, Sriracha, rice vinegar, lime juice, and sweet chili sauce.

Toss salad ingredients with dressing.
