Italian style might be a stretch here as much as saying this is shakshuka, but tastes absolutely delicious.

Sauté diced onion in olive oil until soft.

Add diced bell peppers and soy sauce; stir to coat. Add sugar if using.

Cook, stirring occasionally, until peppers are soft.

Add tomato sauce or canned tomatoes to cover. Cover and cook 10 min.

Remove lid, simmer until sauce thickens. Season with salt, cayenne, cumin, and black pepper.

Add chopped cherry tomatoes if using. Don’t let sauce dry out.

Crack each egg into a ramekin, then gently add to sauce, spacing evenly.

Cover and cook on medium heat until eggs are set to your liking.

Sprinkle mozzarella and/or parmesan on top. Cover to melt cheese.

Serve hot with sourdough or focaccia bread

Tips
Crack the eggs into a ramekin one at a time before adding to the pan to avoid breaking the yolks.
