Ingredients

2 servings
  • 1Onion (medium, diced)
  • 2Bell peppers (red, orange, or yellow, diced)
  • to taste Soy sauce (shoyu)
  • 0.25 tspWhite sugar (optional)
  • enough to cover vegetables Tomato sauce or canned tomatoes
  • to taste Salt
  • to taste Cayenne pepper
  • to taste Cumin
  • to taste Black pepper
  • 6Cherry tomatoes (chopped, optional)
  • 4Eggs
  • 40 gMozzarella cheese (shredded)
  • 20 gParmesan cheese (grated)
  • 1 tbspOlive oil
  • as neededSourdough or focaccia bread

Steps

  1. 1

    Sauté diced onion in olive oil until soft.

  2. 2

    Add diced bell peppers and soy sauce; stir to coat. Add sugar if using.

  3. 3

    Cook, stirring occasionally, until peppers are soft.

  4. 4

    Add tomato sauce or canned tomatoes to cover. Cover and cook 10 min.

  5. 5

    Remove lid, simmer until sauce thickens. Season with salt, cayenne, cumin, and black pepper.

  6. 6

    Add chopped cherry tomatoes if using. Don’t let sauce dry out.

  7. 7

    Crack each egg into a ramekin, then gently add to sauce, spacing evenly.

  8. 8

    Cover and cook on medium heat until eggs are set to your liking.

  9. 9

    Sprinkle mozzarella and/or parmesan on top. Cover to melt cheese.

  10. 10

    Serve hot with sourdough or focaccia bread

Tips

Crack the eggs into a ramekin one at a time before adding to the pan to avoid breaking the yolks.
