Ingredients

3–4 people
  1. 2 cups(peeled and chopped)- Lauki (bottle gourd)
  2. 1 cup(soaked and boiled)-Soyabean chunks
  3. 1large (finely chopped)-Onion
  4. 1medium (chopped), Potato - 1 medium (chopped)- Tomato
  5. 2tablespoons- Oil
  6. 1 teaspoonPanchphoran
  7. 1 teaspoonGinger paste
  8. 1 teaspoonKasuri methi
  9. 1 1/2 Jeera dhaniya powder
  10. 1/2 teaspoonRed chili powder
  11. 1/4 teaspoonBlack pepper
  12. 1/2 teaspoonHaldi (turmeric powder)
  13. 1/2 tsp Salt
  14. 1/2 cup(washed lightly)-Poha
  15. 1-1 1/2 cupsWater -

    Unlock the full potential of your ingredients, Wash and chop lauki, onion, potato, and tomato into small pieces.

    Soak and boil soyabean chunks.

    Marinate with a little salt and haldi.
    Heat oil and tempering, In a kadhai, heat oil.
    Add panchphoran and red chili.

    Let it splutter. Cook onion, Add chopped onion and fry until golden brown.
    Add potatoes, Add chopped potatoes and fry for 3-4 minutes.

    Add spices, Add ginger paste, kasuri methi, and jeera dhaniya powder.
    Mix well. Add soyabean, Add marinated soyabean chunks and mix properly.
    Add lauki and seasoning, Add lauki, salt, and haldi.

  6. 6

    Mix well. Spice it up, Add red chili powder and black pepper. Stir nicely.
    Add poha and water, Add washed poha and water. Mix well and cover.

  7. 7

    Cook, Let it cook on medium flame until everything becomes soft.
    Final touch, Add chopped tomato and cook for 3-5 more minutes.
    Serve hot 🍲. Garnish if you like and serve with roti or rice.

    Serving Suggestion: Best served hot with roti, paratha, or steamed rice. You can also enjoy it as a one-pot healthy meal.
