  2. 1/2 cupPasta sauce (your choice)
  3. 1 tbspOlive oil (or butter)
  4. A pinch ofOptional: chili flakes or dried herbs
  5. Optional: Grated cheese or protein (like leftover paneer/meat)

    Boil: Fill the kadai with water, add a generous pinch of salt, and bring to a boil. Add the spaghetti and cook according to the package instructions.

    Reserve: Before draining, scoop out 2 tablespoons of starchy pasta water. Drain the rest.

  3. 3

    Heat: Return the kadai to the stove on medium heat. Add the olive oil and the pasta sauce.

  4. 4

    Integrate: Pour the reserved pasta water into the sauce. This thins the sauce slightly so it coats the noodles evenly rather than sitting on top like a heavy layer.

  5. 5

    Toss: Add the cooked spaghetti directly into the kadai. Toss with a fork for 1–2 minutes until the sauce is fully integrated and the pasta is coated.

  6. 6

    Finish: Garnish with cheese or herbs if available and serve immediately.

Tips

The "Pasta Water" Trick: Even with jarred sauce, the starch in the pasta water is essential; it creates a cohesive "bridge" between the sauce and the noodles.

Surface Area: The wide shape of the kadai allows you to toss the pasta easily without breaking the strands.

Texture: If the sauce feels too flat, finish with a drizzle of fresh olive oil just before eating to brighten the flavor.
