Ingredients

  1. 3 cupcurd / yogurt
  2. 1 cupgrated paneer
  3. 3 tbspfinely chopped onion
  4. 1 inchginger paste
  5. 2finely chopped green chilli
  6. 2 tbspchopped cashew nuts
  7. 1 tbspchopped raisins/ kismis
  8. 1/2 tsproasted cumin powder
  9. 1/2 tspgaram masala
  10. 1/4 tspblack pepper powder
  11. 1/2 tspchaat masala
  12. 1/2 tspsalt
  13. 2 tbspfinely chopped green coriander leaves
  14. 3 tbsproasted gram flour/ besan
  15. 1 cupdry breadcrumbs for coating
  16. Oil for frying as per required

    Firstly, take curd and tie in a clean cotton or muslin cloth. Then place a heavy object on it to strain off excess water, and keep in fridge for 10 to 12 hours or overnight.

    Now transfer the hung curd into a large bowl. Then
    add grated paneer, finely chopped onion, ginger paste, finely chopped chilli, chopped cashew nuts and chopped raisins.

    Then add roasted cumin powder, garam masala, black pepper powder, chaat masala and salt. Further, add finely chopped green coriander leaves and mix using a whisk to break any lumps.

    Then also, add roasted gram flour (besan) and continue to mix combining everything well.

    Now take a small ball-sized mixture and shape to the cutlet. Then roll over dry breadcrumbs for uniform coating. Then freeze for 1 hour or until it turns firm slightly.

    Now deep fry in hot oil, keeping the flame on medium. Immediately, the kebab turns golden brown. So gently fry on both sides until it turns golden brown and crisp. Then drain off kebab to remove excess oil.

Tips

1) Firstly, make sure to add gram flour as required as it helps in binding.
2) It’s always good to strain off the water completely, or else the mixture will break while frying.
3) Additionally, fry in hot oil else there are chances for curd to melt and ooze out.
