Ingredients

  1. 500 gmsChicken -
  2. 2 cupBasmati rice -
  3. 4 cupHot water -
  4. Chopped onion - 4 medium
  5. 4-5Whole red chilli -
  6. Cloves- 5
  7. 2-3Green cardamom -
  8. Cinnamon - 1 inch stick'
  9. 1 pieceMace -
  10. 1Black cardamom -
  11. 2 tspGinger garlic paste -
  12. 1/2 tspCumin seeds -
  13. Bay leaf - 2 - 3
  14. strandsSaffron - few
  15. 2 tbspHot milk -
  16. 2Green chilli -
  17. 1 pinchGaram masala powder -
  18. Chopped coriander leaves - 1 tsp
  19. 1/2 cupOil -
  20. 1/2 cupClarified butter -
  21. Salt - to taste

Steps

30 mins
  1. 1

    Heat oil in a pan.
    Add whole garam to crackle.
    Add onion and fry till light brown. Add ginger garlic paste and mix well.
    Add chicken pieces and salt and fry for 7 - 8 mins on medium flame,cover the lid. When color of the chicken pieces are light brown turn off the flame. Heat clarified butter in other pan and fry the chopped onion in dark brown and strain it

    .Now add bay leaf and whole garam masala add ginger garlic paste and mix well.Add rice and mint leaves and green chilli and mix well.
    Add rice,green chilli and four cup of hot water and cover it and cook 15 mins on medium flame.

    Add a pinch garam masala and switch off the gas.
    Soak saffron in hot milk for one hour and mix into the pulao. Garnish with coriander leaves and half fried onions and mix well and cover for five mins.
    Serve hot garnish with coriander leaves and fried onion.
