Ingredients

2 hrs
6 - 8 servings
  • For the cake
  • 1 cupflour
  • 1 1/2 tspbaking powder
  • 1/2 tspsalt
  • 1/2 tspground cinnamon
  • 5large eggs
  • 1 cupsugar, divided
  • 1 1/2 tspvanilla extract
  • 1/3 cupmilk
  • For the tres leches
  • 1 (12 oz)can evaporated milk
  • 1 (14 oz)can sweetened condensed milk
  • 1/4 cupheavy cream
  • For the frosting
  • 2 cupsheavy whipping cream
  • 2 tbssugar
  • 1 tbs+ 1 tsp white balsamic vinegar infused with cara cara orange and vanilla
  • For the garnish
  • 6strawberries, cut off top and slice lengthwise
  • 6large lemon balm leaves

    Mix the dry ingredients for the cake in a large mixing bowl. Set aside.

    Separate egg yolks and egg whites into separate mixing bowls.

  3. 3

    Using an electric hand mixer, beat egg yolks. Slowly add 3/4 cup of sugar. Beat until well combined. While mixing, slowly add milk and vanilla. Mix together 1 minute and set aside.

    Beat egg whites on high speed for 1 to 2 minutes. It should form soft peaks. While mixing, slowly add remaining 1/4 cup sugar. Mix on high for 1-2 minutes more. Peaks should be stiff, but not dry.

    Mix flour mixture and egg yolk mixture until well combined. Not lumpy. With a batter spatula, fold in the egg white mixture. Do not overmix.

    Turn out batter into a greased 9 x 13 baking dish. Spread out evenly, this batter will not settle. Place oven racks 1 step above and 1 step below center of oven. Preheat to 350 degrees F. Bake 15 minutes on the bottom rack. Move to top rack and bake for 20 to 22 more minutes. I like mine to get very golden brown on top. A toothpick should come out of the center clean at this point.

    Remove cake and let cool 15 minutes. Mix together the tres leches.

    Prick cake all over with a fork. Pour the tres leches over the top of the cake evenly. Refrigerate for at least 30 minutes.

    While refrigerating, mix the heavy cream and sugar for the frosting. Beat on high speed for about 60 seconds. It should start getting stiff. Mix the vinegar in and beat about another 30 seconds. Should have a stiff whipped cream with a good zing.

    Spread frosting evenly over cooled cake. Arrange garnishes over top and serve. Enjoy.

Tips

Fresh strawberries are best, but if using frozen, slice while still half frozen. Then drain juices before garnishing. There are a couple specialized ingredients in here. The infused vinegar i get from a local shop that sells infused vinegars of all kinds. It can be recreated with 1 tbs plain white balsamic vinegar 1/2 tsp vanilla and 1/4 tsp orange extract. Test that and if you want the orange flavor to be a little more forward, add a dash more. The lemon balm can be substituted with any mint.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
