Ingredients

12-13 minutes
1 cookie per person
  • 1 1/3 cup (267 g)dark brown sugar (light brown sugar works too)
  • 1/3 cup (67 g)granulated sugar
  • 1 cup (227 g)butter, melted and cooled (salted or unsalted)
  • 2large eggs
  • 1 tspvanilla extract
  • 1/2 tspmint extract
  • 2 tbspmilk or creamer (optional)
  • A fewdrops green gel food coloring (optional)
  • 3/4 tspbaking soda
  • 1/2 tspbaking powder
  • 1 tspcornstarch
  • 1/2 cup (85 g)chopped Andes mint chocolate
  • 1 cup (170 g)chocolate chips
  • 8 ozwhite chocolate bar, chopped (for topping)

Steps

12-13 minutes
  1. 1

    Mix wet ingredients
    In a large bowl, mix brown sugar, sugar, melted butter, eggs, vanilla, mint extract, and milk/creamer until smooth. Add green food coloring if using.

    Add dry ingredients
    Stir in flour, salt, baking soda, baking powder, and cornstarch until just combined.

  3. 3

    Add mix-ins
    Fold in Andes mints and chocolate chips.

  4. 4

    Chill dough
    Freeze dough for 15 minutes.

  5. 5

    Bake
    Bake at 350°F (177°C) for 12–13 minutes.

  6. 6

    Finish
    Press chopped white chocolate on top while warm if desired
