Ingredients

7-8 minutes
one cookie per person
  • 1/2 cup (100 g)brown sugar (light or dark)
  • 1/3 cup (67 g)granulated sugar
  • 1/2 cup (113 g)butter, cooled (salted or unsalted)
  • 1egg
  • 2 tspvanilla extract
  • 1 1/3 cup+ 1 tbsp (175 g) all-purpose flour
  • 1/2 tspbaking soda
  • 1/2 tspbaking powder
  • 1 tspcornstarch
  • 1/2 tspcinnamon (optional)
  • 1 cuprolled oats

Steps

7-8 minutes
  1. 1

    In a bowl, mix the brown sugar and granulated sugar into the browned butter until smooth.

  2. 2

    Add the egg and vanilla extract and mix well.

  3. 3

    In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cornstarch, and cinnamon (if using).

  4. 4

    Add the dry ingredients into the wet ingredients and mix until just combined (don’t overmix).

  5. 5

    Stir in the rolled oats until evenly spread through the dough.

  6. 6

    Chill the dough in the freezer for 10 minutes.

  7. 7

    Scoop dough onto a baking sheet.

  8. 8

    Bake at 350°F (177°C) for 7–8 minutes, until edges look set but centers still look soft.

    Let cool on the tray for a few minutes before eating so they firm up.
