Bakery Style Vanilla Pastry Beginner Friendly Recipe

Pastry recipe for begginers.

First thing first separate egg yolks and whites. Beat the egg yolk for 2 minutes then add half of the sugar and beat with the electric beater till it get white in colour and become like a cream and almost triples in volume. Then add the milk and beat again until mix followed by oil and mix till well incorporated. Now add vanilla essence and mix very well and set aside. Now seive the dry ingredients all-purpose flour, baking powder, salt and mix well. Add this powdered mix to the wet ingredients.

Add the dry ingredients to the wet Ingredients but in batches and only cut and fold the dry and wet Ingredients else all the air which we had incorporated will go out. The batter will look thick and of dropping consistency. Now keep it aside and start beating the egg whites. Beat till it gets foamy and doubles in size. Now add sugar little by little and keep on beating till it get the consistency of whipped cream. Now add lime juice to kind of stabilise it and mix again.

Don't over beat or over mix and ingredient. Time to add the beaten egg whites to the batter but in batches and very slowly and gently and by cut and fold method. Once done mixing keep it aside and don't overmix the batter and it should be of ribbon consistency. Now grease and line a baking tray with parchment or baking paper and pour the batter on it. Levet it with a spatula and tap it to remove excess air. Preheat your oven at 180°C for 15 minutes then bake your cake for 15-18 minutes.

Don't bake it for more than 20 mins else it will become very hard and dry. Once bake take it out from the oven remove the parchment paper and allow it to cool down. Once cool down cut it in 12 equal size squares or rectangles as you like. Now add a little water on each layer and add generous amount of cream on it. Then put the second layer and repeat the process soak some water then add whipped cream. You can add whipped cream as per your taste and level it then add the final third layer.

Do the same process again soak it then layer it with whipped cream and level it. Now cover all the 4 sides of the pastry with whipped cream and level it with palette knife and scaper.Once done make design as per your like. I added a drop of orange gel colour in the cream and make a simple design with 1M and 2D nozzle. You can make any design with any nozzle.Like so make all the other pastries.Keep it in the refrigerator for 20 mins then serve. By this time it will get set and taster much better.
