Ingredients

25-30 minutes
1 bar per person
  • 1 cup (120 g)all-purpose flour
  • 1/2 tsp (2 g)baking powder
  • 1/2 cup (43 g)unsweetened cocoa powder
  • 1 tsp (2 g)instant espresso powder (optional)
  • 3/4 cup (170 g)butter (salted or unsalted)
  • 1/3 cup (67 g)sugar
  • 2 tbsp (28 ml)canola or vegetable oil
  • 2large eggs
  • 1egg yolk
  • 2 tsp (10 ml)vanilla extract
  • 1 cup (200 g)sugar
  • Marshmallows (mini or regular)

Steps

25-30 minutes
  1. 1

    Mix dry ingredients
    In a bowl, whisk together flour, baking powder, salt, cocoa powder, and espresso powder. Set aside.

  2. 2

    Make butter mixture
    In a small pot over medium heat, melt butter, sugar, and oil together until fully melted and smooth. Set aside to cool slightly.

  3. 3

    Mix wet ingredients
    In a large bowl, whisk eggs, egg yolk, vanilla, and sugar until well combined.

  4. 4

    Combine mixtures
    Slowly add half of the butter mixture to the wet ingredients and mix. Then add the remaining half and mix again.

  5. 5

    Add dry ingredients
    Fold in the dry ingredients until just combined (do not overmix).

  6. 6

    Bake
    Pour into a greased 9x9 inch pan.
    Bake at 350°F (177°C) for 25–30 minutes.

  7. 7

    Add marshmallow topping
    Immediately after baking, top with marshmallows.

  8. 8

    Broil
    Broil on high for 2–3 minutes until marshmallows are golden and toasted (watch closely!).
