Prep Fish. On a large Tray or dish pat dry the fish then sprinkle with the salt both sides. Allow to sit for 5-10 mins then pat dry again. Coat with the Flour both sides. Heat the Oil in a LARGE frying pan to 190c.

In a small sauce pan combine all the fish sauce topping items and heat for 3-5 mins until slightly thickens. Reserve until fish Cooked.

In a small bowl combine everything for the mango salad. Save a few leaves of the coriander. Chilli in fridge until ready to serve.

Carefully place the fish into the oil meat side down. Cook for 4-6 minutes depending how thick the fish is. It sound be a wonderful golden colour and the meat completely milky white and slightly coming away from the bone. Turn the fish over and cook skin side down for 2 minutes. Then transfer to some kitchen paper.

Place fish onto a large platter or try. Spoon over the fish sauce and sprinkle with the remaining coriander. Serve immediately with the mango salad by the side. ENJOY :P
