Ingredients

1 Jar
  • 1/2 cupfresh coriander leaves, tightly packed
  • 1/2 cupfresh flat-leaf parsley leaves, tightly packed
  • 2Large garlic cloves, peeled
  • 1/2 Tbspsmoked paprika
  • 1/2 tspground cumin
  • 1/2 tspground coriander
  • 1 teaspoonred pepper flakes
  • 2saffron threads (optional)
  • 1 TbspJuice and zest of Lemon
  • 50 mlolive oil

    Put all the dry ingredient into the bowl of a food processor and blitz and few times with the chopping blade. Dont over do as you dont want a paste.

    With the motor running on slow add the oil slowly pouring into the top to emulsify. Taste and adjust salt and lemon. It should still have some lumpy texture. Spoon over chicken / Fish before and after cooking. Can put in a jar pour over a little olive oil on top and keep in fridge for a week. Enjoy :P

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
