Heat oil in a pan and add cumin seeds. Let them crackle.
Add finely chopped onions and fry until golden brown.
Add ginger-garlic paste and green chili paste. Sauté for 1 minute until aromatic.
Add chopped tomato and cook until soft and mushy.
Add carrot, French beans, potatoes, and fresh peas. Mix well and cook for 3–4 minutes. - 2
Add coriander-cumin powder, black pepper powder, Kashmiri chili powder, and salt. Mix everything nicely so the vegetables are coated with masala.
Pour in 1/2 cup water, cover, and cook until the vegetables become tender and the gravy thickens slightly. - 3
In the same pot, spread a layer of boiled rice first. Then add a layer of vegetable gravy. Cover with the remaining rice on top.
Sprinkle rose water, yellow food colour or saffron, and melted ghee over the rice.
Cover and cook on low heat for 5 minutes so the flavors blend beautifully.
Serve hot with raita, salad, or pickle.
Tips
Soak basmati rice before cooking for long and fluffy rice grains.
Do not overmix the rice while layering to avoid breaking the grains.
Cook on low heat after layering so the
rice absorbs all the flavors beautifully.
You can use saffron instead of food colour for a richer aroma and taste.
