In a food processor, add the bell pepper, garlic and cilantro/parsley and chop till coarse.

Add the lamb chops to a bowl with the spices and chopped bell pepper mixture. Massage well to coat the chops.

Drizzle ¼ olive oil and lemon juice. Mix well.

Cover and refrigerate for 1 hour.

Remove the bowl from fridge and bring to room temperature.

Preheat oven to 400F/204C. Line a baking dish with parchment paper.

Heat a cast iron skillet or pan with remaining olive oil till shimmering.

Sear the chops, in batches, 3-4 minutes per side.

Place the chop on baking dish and bake for 10 minutes, flip and bake for another 10 minutes or to desired doneness.

Remove and tent with aluminum foil and rest for 10 minutes.

Serve warm with deglazed pan juices.
