This is a simple yet a flavourful side dish done with Long Brinjals or Eggplants. This variety of Eggplants is absolutely delicious and flavourful and when deep fried makes for a perfect side at mealtimes. Simple marination with everyday spices makes it even more yummy. For a change, this time around, i have used a tablespoon or two of Cornflour in the marination thus giving it a unique texture and flavour both.
Cornflour added gives it that perfect crunch. There is no need of adding many spices. Just a few everyday pantry staples or powdered spices are enough to make them lip-smacking. Homemade and absolutely delicious pure comfort food at your disposal in just a few minutes. Serve it alongside steamed Rice, Raw Mango Daal and Crisp Fried Eggplants. Everyone would love it for sure. Wash and pat dry all the long eggplants at first. Cut each lengthwise into 2 or 3 pieces. To a mixing bowl, add all the ingredients as mentioned one by one except the last.

Mix well and set aside until use. Add a tablespoon or two of water while mixing as required.

Meanwhile heat enough oil for frying. Deep fry few at a time until golden brown and crisp. Do it in batches for a proper frying.

Drain on a kitchen towel or an absorbent paper as you like. Serve hot alongside mealtimes as a lovely side. Enjoy!
