First, crack the eggs and keep them aside.
Wash the brinjal and cut it into small pieces.
Peel the onion, wash it properly, and cut it into small pieces.
Take a frying pan and heat it. - 2
Add oil to the pan. When the oil is hot, add cumin seeds and fry them well.
Add chopped onion and brinjal pieces. Fry them and cover the pan.
Cook until the brinjal becomes soft and well cooked.
Then add red chili powder, ginger-garlic paste, coriander powder, salt, and turmeric powder.
Mix everything well and cook for a few minutes.
Add the eggs and mix well. - 3
Cook until the eggs are fully cooked and blended with the masala.
Once done, serve hot with roti, paratha, or rice.
