Here i have used leftover fulka rotis and Vegetable Curry
Steps

Take the leftovers. Mash the leftover Vegetable Curry.

Chop vegetables and boil the corn. Ready the Dry Spices, Sauce Mix and grated 2 tomatoes.

For Add on Fresh Vegetables: In 1 tsp olive oil add ginger garlic paste and sauté for a minute Add in chopped onions and carrots.

Sauté on medium gas flame. Add in capsicum and boiled corn. Keep the vegetables crunchy.

Add in the Dry Spices and salt. Mix. Add the Sauce Mix. Lastly,add grated paneer and mix.

Switch off gas and transfer the vegetables to a plate. In same pan take 1/2 tsp olive oil and add in 2 grated tomatoes.

When done add salt and chilli powder. Mash the leftover Vegetable Curry and add into the cooked tomatoes.

Mix and add in.the fresh vegetables from the plate. Mix.

Add in cheese spread,mix and switch off gas.The Lasagna stuffing is ready.Grease a baking dish lightly with olive oil.

Assembling: Place a leftover Roti on the greased dish. Spread half of the stuffing prepared.

Place 2nd leftover Roti and spread a layer of the remaining stuffing. Cover with the 3rd leftover Roti.

Grate Kid's favourite cheese on top.

Bake in a preheated oven at 150°C for 5-6 minutes or until the cheese melts well.

Take out the aromatic Jugaadu Leftovers Lasagna from the oven. Serve with a smile to your near and dear ones 💗
