When summer heat peaks, having something new, cold, and healthy is pure bliss! Nature hides wonderful nectar all around us. For this week's Cookpad Apron Challenge theme 'June's Finest', I have created a super healthy and unique 'Amrut Summer Cooler : Bili Jamun Jugalbandi using fresh wood apple (Bili) from my garden and summer-special jambuls (Jamun). This is a beautiful layered drink that looks stunning and tastes incredibly refreshing and nutritious!

When summer heat peaks, having something new, cold, and healthy is pure bliss! Nature hides wonderful nectar all around us. For this week's Cookpad Apron Challenge theme 'June's Finest', I have created a super healthy and unique 'Amrut Summer Cooler : Bili Jamun Jugalbandi using fresh wood apple (Bili) from my garden and summer-special jambuls (Jamun). This is a beautiful layered drink that looks stunning and tastes incredibly refreshing and nutritious!

Preparing Bili Juice :
First, extract the pulp from the bili fruit. Add a little water and blend it in a mixer jar, or mash it with your hands and strain it to separate the seeds and fibers. Take this thick strained juice, add a little sugar, half of the black salt, and a little water, then blend it nicely in the mixer. Keep this yellow-colored Bili juice aside. - 2
Preparing Jamun :
Next, remove the seeds from the fresh jamuns, chop them into pieces, and add them to a clean mixer jar. - 3
Blending Jamun Juice :
Now, add a little cold water to the jar and blend everything thoroughly until it turns into a smooth, vibrant purple jamun juice. - 4
Layered Serving - Mocktail Look :
To get the beautiful layered look, take a serving glass. First, pour the prepared purple jamun juice at the bottom. Then, using a spoon, very gently layer the thick yellow bili juice right on top so that two beautiful, distinct layers are visible and your drink is ready to serve. - 5
Tips
∆ If the Bili fruit is very ripe and naturally sweet, reduce the amount of sugar, or you can easily replace the sugar with honey.
∆ To achieve the perfect layered mocktail look, keep both juices slightly thick. If the juices are too watery, they will mix together instead of forming separate layers.
