Pat the shrimp dry.

Thread the shrimps on to skewers, piercing through both the thickest part and the tail to secure.

Whisk together in a small bowl smoked paprika, dark brown sugar, garlic powder, onion powder, salt, cayenne pepper in a small bowl.

Drizzle the skewers with olive oil and then coat them with the prepared rub/marinade in Step 3 on both sides.

Heat a grill pan and grease the grates with oil.

Grill the skewers undisturbed for 3 minutes until the edges turn pink and a slight char forms.

Mix in a bowl to prepare a glaze by mixing honey or maple syrup, apple cider vinegar and butter. Brush top side of the shrimp with the glaze.

Flip the skewers and cook for another 3 minutes. Brush top side of the shrimp with the glaze. Remove.

Garnish with sprinkle of feta, cilantro and lemon juice and serve mint chutney.
