Boil the potato until tender, then peel and mash it in a mixing bowl. Wash the poha lightly and let it rest for a few minutes until softened.

Add the softened poha, chopped green chilies, chili flakes, salt, roasted cumin powder, and lemon juice to the mashed potato. Mix everything well to form a smooth dough-like mixture. Shape the mixture into any desired shape.

In a separate bowl, combine the cornflour, salt, and chili flakes. Add water gradually and mix to make a smooth, medium-thick slurry.

Dip each potato-poha ball into the slurry, coating it evenly. Heat oil in a deep pan over medium heat. Fry the coated balls until golden brown and crispy on all sides. Remove and drain on paper towels.

1) For extra crispiness, refrigerate the shaped balls for 15–20 minutes before dipping them in the slurry and frying.
