Poha Uttapam is a healthy and tasty South Indian-style dish made from poha (flattened rice), curd, and vegetables. It is soft on the inside and slightly crispy on the outside. Poha uttapam is easy to prepare and makes an excellent breakfast or evening snack. It can be served with coconut chutney, mint chutney, or sambar for added flavor.

Wash the poha and soak it in water for 5 minutes. Drain excess water.

Wash, cut, and crush vegetables in a food processor.

Blend the soaked poha with curd into a smooth batter. Add semolina and a little water if needed.

Transfer the mixture in a mixing bowl and add crushed vegetables. Add salt and chilli powder.

Make a thick but spreadable batter. Let it rest for 10–15 minutes.

Heat a non-stick pan and lightly grease it. Pour a ladleful of batter and spread gently into a thick uttapam.

Drizzle a few drops of oil around the edges. Cook on medium heat for 2–3 minutes, flip, and cook the other side until golden.

Serve hot with peanut chutney.
