Wash the poha and soak it in water for 5 minutes. Drain excess water.

Wash, cut, and crush vegetables in a food processor.

Blend the soaked poha with curd into a smooth batter. Add semolina and a little water if needed.

Transfer the mixture in a mixing bowl and add crushed vegetables. Add salt and chilli powder.

Make a thick but spreadable batter. Let it rest for 10–15 minutes.

Heat a non-stick pan and lightly grease it. Pour a ladleful of batter and spread gently into a thick uttapam.

Drizzle a few drops of oil around the edges. Cook on medium heat for 2–3 minutes, flip, and cook the other side until golden.

Serve hot with peanut chutney.
