Mix all ingredients except the vegetables together. Dashi means stock. We use kelp stock. You can use instant dashi powder and water.

Cut the vegetables into the sizes you like. And cook them: Drop the vegetable into boiling water for 30-40 seconds if it's green vegetable like spinach or kale, or longer until it gets soft if it's root vegetables.

Strain the water carefully and drop the vegetable into cold water. Squeeze the extra water.

Put the sauce on.

We have used spinach, chard, kale, cirantro, celery, summer squash, green onion, beet tops, carrots and potatoes, broccoli, cauliflower...etc...etc. Works with most of the vegetable. The one on the picture has some fried sweet potato on it. Enjoy!!
