Soak rice and mixture for urad dal, fenugreek seeds, Chana dal in two seperate bowls for atleast 5-6 hrs. Then grind it seperately until it become fine, smooth paste. Try not to add water or add minimum water. Now mix both batters and keep it near warm place so it will help it to ferment little faster. Keep it over night or atleast 6-7 hrs

To make spread chutney i prefer to grind soaked chillis with tomato and salt.

To make coconut chutney grind coconut slices, fresh coriander, Green chillis and salt. Give the grinded paste tadka of oil, curry leaves, Mustard seeds and pinch of turmeric.

To make dosa make our fermented batter little thinner adding some water. Take non stick pan and lightly greace it with oil. Sprinckle some water in case of over heated pan. Now spread the batter evenly on pan. Once you realised that dosa is separating from pan spread red chutney on it and spread some butter/ghee to make dosa crispy. And fold it. Serve it with aloo bhaji, Sambhar, and Coconut chutney.
