Mousakhan (not Musa Khan...a man who is probably googled by accident when looking for this recipe) is a simple Palestinian dish using chicken, onions, sumac, and paper thin bread called markook. The bread and sumac can be found in your local Arab grocery store. If you can't find the markook, Arabic flat bread will work just as well.

  • 2Onions Large
  • 1 TablespoonSumac
  • Olive Oil as needed
  • 2 large 4Pieces of markook , or pitas , split
  • 1 CupChicken Broth
  • To Tastesalt pepper and

    Start by cleaning your chicken and patting dry. Coat generously with olive oil, salt and pepper. Add a little water to the bottom of your roasting pan so the chicken won't stick. Roast until cooked thoroughly, then remove the meat from the bones.

    While the chicken is roasting, chop the onions and fry until lightly caramelized.

  3. 3

    Combine the chicken with the onions, sumac, pan drippings from roasting the chicken, and chicken broth. Cook until the broth has reduced. Everything should have a pink tint from the sumac. Check for salt and pepper, add according to your tastes.

    Slice the bread into long strips, making them about 4-5 inches wide. One at a time, press the bread strips into the chicken/onion mixture to slightly moisten. Then spoon some of the mixture onto the bread and roll like a cigar.

    Repeat with each bread strip, lining the rolls in an oiled baking dish side by side until you've used up all the chicken mixture.

    Bake at 375 for 15-20 minutes, or until the rolls are crispy. Serve alongside soup and salad for a complete meal.
