Mushroom, Spinach and Peas Pasta

Life has been incredibly busy lately, and with my work having two weeks where I've had Monday off hasn't really helped. So while catching up on work and housework and health issues between the toddler and myself, the blog took a little snooze. Apologies if you were waiting for a recipe to be posted in the last week!
This recipe has been a result of a busy work week and the need to fill up that very hungry tummy
These are basic ingredients that I usually have in the pantry or the fridge/freezer and I am sure you do too. I was starving, and I was quite pleased that it didn't take that long to make this dish

In another pan, add the chopped mushrooms to some melted butter. Saute until it has softened. Next add the chopped spinach and green peas

Season with salt and pepper and allow it all to cook through completely

Add the egg pasta ribbons to the boiling water and cook it till its al dente or the way you like your pasta done. Just don't overcook it! :)

Back to the pot of veggies, add the jar of the stir through sauce, and once the pasta is cooked, add it and give it all a good stir to mix well. Season with salt and pepper

Right before serving, garnish with some parmesan and get ready to eat!
