Ingredients

  • 2 - 3potatoes cubes medium
  • 2 cupscauliflower florets
  • 2 numbersonion red
  • 3 - 4 numbersspring onion
  • 8 - 10 clovesgarlic chopped garlic chopped
  • 1 numbergreen chilli
  • 1 tablespoonmustard seeds
  • 1 teaspooncumin seeds
  • 1/2 teaspoonhing powder
  • 1/2 teaspoonturmeric
  • 1 - 2 tablespoonscoriander powdr
  • 1 tablespooncurry powder
  • 1 teaspoongaram masala
  • 1 - 2 tablespoonskasuri methi
  • 1/2 cupvegetable broth
  • 1 tablespoonghee
  • 1 teaspoonsugar
  • 1 - 2 teaspoonslemon juice

Steps

  1. 1

    BBoil the potatoes and cauliflower till 3/4th done. Save the broth.

  2. 2

    Now,saute the mustard, jeera with the garlic in 2 or 3 tablespoons oil or dalda.

  3. 3

    Add the chopped onions and spring onion with pinch of salt. Let it become translucent and then add the spices and mix well.

  4. 4

    Season with salt pepper and toss in the boiled vegetables. Stir well and cover. Let it simmer for 5-8 minutes.

  5. 5

    Add the kasuri methi, water or vegetable broth. and garam masala. Let it stand without cover for another 2 minutes. Season a bit with sugar if u like it a littke sweet.

  6. 6

    Garnish with coriander leaves and a squeeze of lemon juice! Drizzle a but of ghee for rich taste.

  7. 7

    Serve hot with tomato sauce and rotis or any bread!
