OOhhh the delicious traditionally made north special potato cauliflower sabzi with a different twist!!

BBoil the potatoes and cauliflower till 3/4th done. Save the broth.

Now,saute the mustard, jeera with the garlic in 2 or 3 tablespoons oil or dalda.

Add the chopped onions and spring onion with pinch of salt. Let it become translucent and then add the spices and mix well.

Season with salt pepper and toss in the boiled vegetables. Stir well and cover. Let it simmer for 5-8 minutes.

Add the kasuri methi, water or vegetable broth. and garam masala. Let it stand without cover for another 2 minutes. Season a bit with sugar if u like it a littke sweet.

Garnish with coriander leaves and a squeeze of lemon juice! Drizzle a but of ghee for rich taste.

Serve hot with tomato sauce and rotis or any bread!
