A lovely crispy eggplant curry which is perfect with Tharka dhal and rice.
Steps

Mix the rice flour, salt, chilli powder and turmeric in set aside.
- 2
Slice the eggplant into 1/2 inch disks.
- 3
Now coat each slice of eggplant with the rice flour mixture.
- 4
In a nonstick pan, add a good amount of oil and shallow fry each slice on a low flame until both sides turn golden brown and crispy.
