Don't have time in your hands? Then this a great dish to prepare in a jiffy.
Steps

Heat oil in a pan. Add the onions and saute till translucent. Add ginger, garlic and green chilli. Saute till raw smell disappears.

Add the rinsed baby spinach, salt and pepper. Mix well. Cover with lid and cook on low heat for 2 mins or until the spinach has softened. Do not overcook spinach.

Open lid and add turmeric powder, chilli powder, coriander powder and cumin powder. Saute till raw smell disappears.

Add the eggs and stir it in with the spinach to scramble it.

Serve hot with rice or chappathi.
