Grind Garlic, grated coconut, turmeric powder, chili powder,and salt to a fine paste, with very little water.

Stuff the bhendi with a little of this masala(about 10 min).

In a large non stick skillet over a medium flame add the oil and mustard seeds. When the mustard seeds splutter add the stuffed Bhendi, the curry leaves and sprinkle the sliced onions on top. Take care to see that the stuffed bhendis are not heaped in a pile but placed in a row.

Cover and cook for two minutes. Lower the flame.Turn them over, cover with a lid and continue to cook until done, turning them over every two minutes. Mid way through this process sprinkle the tamarind water mixed with a little salt.

Goes well with chapati, roti, and rice.
