Curry Leaf Baked Chicken
A healthy and yummy dish .

Dry roast the coriander seeds, set aside once they turn slightly darker.

In the same pan/kadai put in the whole spices and black peppercorns. Once they are lightly toasted toss in the grated coconut and stir for another minute.

Grind all the above toasted ingredients coarsely with curry leaves.

Marinate the cleaned and dry chicken pieces with the ground mix, salt and cooking oil.

Place the chicken pieces, diced bell pepper, onions and tomatoes in the baking dish.

Heat the oven to 200 C and put in the chicken for 40 minutes.
