  • 400 grice fivegrain
  • 400 gmixed spring vegetables
  • 10cherry tomatoes
  • 1/2red onion (diced)
  • 250 gmozzarella cheese (chopped)
  • 50 gspinach
  • 1/16 cupbasil
  • 3 or 4mint leaves
  • to tastepepper (mixed or black)

Steps

45 mins
  1. 1

    Boil rice and leave to cool for 30 minutes

    Boil mixed vegetables for 5-7 minutes and leave to cool

  3. 3

    Add mixed vegetables, cherry tomatoes, red onion, and mozzarella

  4. 4

    Add spinach leaves, basil, and mint

    Add extra virgin olive oil and pepper

  6. 6

    Refrigerate for 3 hours before serving
