Hello world!! I wanted to blog for quite a long time now.. This being the first time I am totally tensed whether I will be up to the mark or not. Since I am already here I will let this nervousness pass away and get a grab of myself.. I know I am sounding endlessly foolish but I should get some slack because I am doing this for the FIRST time. Enough fool's talk let me introduce myself.. I am Poulami..and I love to cook occasionally and devour on chocolate (well, who does not??!) My mom,my sister and my boyfriend are equally crazy about chocolate so when I decided this Sunday to cook for this blog I knew I want chocolate to be a part of my blog post and as an Indian we believe to start anything new with some sweets, this blog thus starts with my Rumolate sandesh (Rum flavored chocolate sweetmeats).. My boyfriend loves it.. :) The recipe is simple but with some crucial points and a lot of patience you will nail it.. Relax and Enjoy..

Ingredients

  • 3 litresmilk Full fat
  • 2 numbersLime
  • 200 gramsDark chocolate
  • 3 tablespoonsCocoa powder
  • 4 tablespoonsRum
  • 5 tablespoonsCondensed milk
  • 8 numbersCashew nuts

    Boil the milk. Shimmer it. Boil it. When the milk is merrily bubbling add the juice of both the limes and let the milk coagulate. The milk will curdle. (don't panic !!) What you are left with now is chenna or cottage cheese and whey.

    Strain the cottage cheese and wash it under running water. Hung it in a muslin cloth and leave it for a couple of hours so that excess water drains out.

    Chop the cashew nuts and slightly roast them to enhance their nutty flavor. Keep aside.

  4. 4

    Break the dark chocolate slab into pieces and melt it in the famous double boiler method. Maintain a low heat to melt the chocolate gently.

    Once the chocolate is melted add in cocoa powder and rum. Fold them together.

  6. 6

    Back to the cottage cheese. Now the crucial task comes in. KNEADING. Knead. Knead. Knead. Tip the cheese onto a clean surface and knead till you get a fine paste. Knead pushing the cheese away with the heel of your palm. The more you knead the better. Once satisfied move on.

    Add the chocolate mixture to the cottage cheese along with the condensed milk. Remember the condensed milk is extremely sweet so you do not need any sugar or sweetener. Mix together.

    Cook the mixture in a heavy bottomed pan. (Heavy bottomed is again crucial else the mixture will burn) Cook until the mixture comes together and leaves the side of the pan. The final mixture will hold together and can be shaped.

  9. 9

    Cool the mixture to room temperature. Make small balls out of it and flatten them slightly from the top so that they look like disc. Voila !! Your sandesh is ready.

  10. 10

    Sprinkle the roasted cashew on top of each sandesh. Serve. Beware they are deelish and no human can stop himself at one....

Namste!! I am Poulami from Kolkata. You can guess that I am Bengali thus by default I have strong affinity towards food. She is a fabulous cook.. She doesn't follow any particular recipe for anything but is always ready to put something delicious on the plate.. I like the way she cooks.. With super speed.. With agility.. She chops..preps..tempers..boils..grinds all in rhythm.. She is quick and organized.. I wish I were more like her.. I too like to cook but due to my work schedule I hardly get any time.. But I have resolved to cook more often thus this blog was created.. Hope you all enjoy!!!!!!
