Peas Basil Sauce Pasta

Peas, Pasta, basil and cheese are all you need to warm your heart. I had not imagined the combination to blend so well and make this gorgeous light pasta sauce.
So, One day you open the email and find that you finally see the mail that you have waited for, for 2 years. The joy is unparalleled. For me it was the mail that thoushaltcook.com is live and it moved to Cucumbertown. It has been a long journey but an awe-inspiring one.
Here is my recipe for the pasta sauce that I made yesterday to celebrate.

Here is my recipe for the pasta sauce that I made yesterday to celebrate.

Boil 2 cup water in a pan and add the peas. Turn off the gas once it comes to the boil, add peas and lit it sit for 5 min.

Drain the water and rinse with cold water and keep aside in a bowl.

Put 2.5 cups of water to boil with 1 tbsp olive oil and 2 tsp salt. Let it come to a boil. Add the pasta and cook it as per instructions or until Al dente.

Reserve 3.4 cup of the pasta water to be used later.

Tear up 8-10 leaves of basil and add to the peas. Also add the salt and cheese slices.

Using a blender/hand blender, grind it all to a coarse paste. Just make sure the cheese is mixed well. Add some water, if need be.

In a pan, heat 1 tbsp oil and add the onions and garlic. Cook them until they are light brown.

Add the pasta, Salt and pepper to taste. Mix well.

Now pour the sauce to the pasta. Add some pasta water to mix the pasta and sauce well.

Keep it on heat for only 2-3 minutes and serve hot with some basil on top.
