I am always on the look out for chicken recipes to go with a salad during the week. This particular recipe is just fresh and simple and flavourful. I love the lemony flavour and using chicken drumsticks or even thighs keeps the texture of the meat tender and it doesn't dry out like if you would have used chicken breasts

Ingredients

  • Chicken drumsticks
  • 1/3 cuplemon juice Freshly squeezed -
  • 2 tbspsLemon zest -
  • - 2 clovesGarlic crushed
  • 2 tspsThyme Fresh leave -
  • 1 tspRosemary Fresh leaves - , finely minced
  • 3 tbspsbutter Melted -
  • Salt
  • Black Pepper

Steps

  1. 1

    In a bowl mix the zest, lemon juice, crushed garlic cloves,rosemary, thyme, salt and pepper

  2. 2

    Place the chicken pieces in a ziploc bag, pour the marinade and seal it pressing out any excess air

  3. 3

    Refrigerate and allow it to marinate for a couple of hours

  4. 4

    Preheat the oven to 425F

  5. 5

    Transfer the chicken to a baking dish, and brush each piece with the melted butter

  6. 6

    Reserve the left over marinade

  7. 7

    About 30 mins later, pour the left over marinade over the chicken and continue baking

  8. 8

    Bake for an hour or so, until the chicken skins are crispy and are a nice golden brown

  9. 9

    Once baked, cover with foil, let it rest for ten mins before serving

  10. 10

    Serve with a salad

Hi there, it seems interesting combo of flavours but I don't have an oven. Could I pan fry say if I use fillets instead?Thanks x
