Nyonya Chicken Curry Kapitan

This is my personal all-time favourite Nyonya dish since childhood. I'll happily eat this with fragrant steam rice all day long. Luckily the preparation is not difficult as you can easily prepare the curry paste in advance which is what I usually do and then just cook this wonderful curry any time you wish. Also Chicken Curry Kapitan goes very well with tumeric rice as well.

Ingredients

3-serving
  • 3chicken legs , chopped into smaller chunks
  • 2russet potatoes , peeled and cut into big chunks
  • 1key lime (I didn't have kaffir lime)
  • to tasteSalt sugar and
  • 200 mlcoconut milk
  • 2 or 3eggs hard boiled , peeled
  • Curry Paste
  • 4 tbspschili paste of (see here for the brand I use)
  • 15shallots , peeled
  • 5garlic gloves
  • 3lemongrass heart stalks of
  • 1 inchtumeric fresh (careful don't get stained!)
  • 5nuts candle (buah keras)
  • 1 tspbelachan paste

    Blend all the ingredients in the ‘Curry Paste’ ingredients into a fine paste with bit of water or coconut milk

  2. 2

    In a pot, heat up 2 tsp of cooking oil at medium low heat. Add in curry paste and cook it till it is aromatic

  3. 3

    Add in the chicken pieces and stir to coat all the meat with the paste well. Once the meat becomes opaque, add in the potatoes and stir well.

  4. 4

    Cook for another minute and add in the coconut milk. Once the mixture boils, lower the fire to simmer for another 8-10 minutes till chicken is cooked through and the potato is fork tender.

  5. 5

    Add in the lime juice, seasoning and hard boiled eggs the last, stir gently and serve

Nyonya food or also known as Peranakan cuisine is a blend of Chinese and Malay cooking styles, that originates from the Peranakans or Baba and Nyonya of Malaysia. The food of the communities that are found mainly in Penang and Melaka. Nyonya food is in unique gastronomic realm all of it's own, with specific and subtle nuances of tastes and flavors. Still quite undiscovered in the international culinary world as yet.
