Coconut chutney

Coconut chutney has a special place in Indian veg thalis. Made from freshly scraped coconut,its relished with idli/dosa/appe too. Moreover,this chutney makes an amazing sandwich-spread!
We start with breaking the coconut into 2 halves....
There they are....perfect half-rounds,ideal for scraping! Now we need green chillies,coriander,mint, cumin and salt to make a spicy chutney.
Now about scraping the fresh coconut. I prefer to use the manual coconut scraper,also called as wili in my mother tongue,Marathi. It yields super-soft snowy-white coconut scrapings.
After the scraping is ready,its just a matter of few minutes... grind everything together and the chutney is done!

Ingredients

1 serving
  • 1 cupcoconut scraped
  • 2green chillies
  • 1 tspcumin seed
  • coriander leaves few
  • mint leaves few
  • to tastesalt

Steps

  1. 1

    Break the coconut into 2 equal halves. Scrape one half of the coconut with coconut scraper.

  2. 2

    Grind the coconut,cumin,chilies,coriander and mint together along with little water.

  3. 3

    Grind till it forms a nice and soft green chutney.

  4. 4

    Add salt and its ready to be served!

Hi! A die-hard foodie,an avid traveler and a dentist-that's me! While traveling this diverse and heritage-rich country of mine,I was lucky to relish the regional cuisines,made with local produce. I have been to see the snow-capped mountains of Himalayas, the serene ocean at land's end Kanyakumari, the devout Jain temples of Gujrat,the intricate carvings at Badami-Hampi,sea-shores of Karde-Harne, the dreamy backwaters of Kerala.......this is an endless list! I relished the food everywhere I went and came back with loads of memories....I experimented in my own kitchen,trying to recreate these flavors. Few recipes need to be made in their traditional way,few could be modified to adapt to our busy urban lifestyle.Cook Bake and Grill is an attempt to present this culinary journey of mine to you.... As I continue to travel and recreate diverse flavors in my kitchen,I will keep u all updated! Welcome aboard!
